Cajun Chicken
Make this chicken for Mardi Gras followed by some King Cake!

Ingredients
- 2 tablespoons oil
- 1 cup onion chopped
- ½ cup red bell pepper chopped
- ½ cup green bell pepper chopped
- ¼ teaspoon kosher salt
- ⅛ teaspoon pepper
- 1½ tablespoons Cajun seasoning
- 4 boneless skinless chicken breasts
- ¾ cup Miceli's Cheddar Cheese shredded
Instructions
- Preheat your oven to 350℉.
- Add the oil, onion, and peppers to a skillet over medium heat, let them cook for about 5 minutes, and then add the salt and pepper.
- Add the seasoning to the chicken, cut a slit into each piece, and then add the cheddar and onion mixture.
- Transfer it to the skillet, and then let it bake for about 25 minutes.
Notes
Be sure to use an oven safe skillet! We slit the chicken horizontally for stuffing.
